Tasty Treat - Dubliner Cheese and Chili Beef Stuffed Peppers

Yum, yum, yum! That’s all we can say about this fab Dubliner Cheese and Chili Beef Stuffed Peppers recipe.
Not only is it gorge, but it’s also pretty good on the calorie count as it’s made with Dubliner Cheese Light! Great for those of us still on the diet wagon.
Preparation Time: 10 minutes
Cooking Time: 40 Minutes
Serves 4
Ingredients
400g Minced Beef
1 Pack of Dubliner Cheese Light
1 Medium Onion Chopped
1 Clove of Garlic Chopped
4 Large Peppers
Chili Seasoning (use either a packet of Taco seasoning or mix 2tsp cumin, 2tsp smoked paprika, 1 tsp chili powder, 1tsp salt and a pinch of sugar)
Vegetable Oil

Side Salad & Rice

Method
Pre-heat your oven to 180C. Heat your frying pan, fry the onion and garlic until translucent.
Add the minced beef and fry until browned. Add the spice and two tablespoons of water and continue to cook for 2 minutes. Add a splash more water if the mixture is too dry.
Split the peppers length ways and remove the seeds but you can leave the stalks on. Fill each pepper half with the chili beef and top with the grated cheese. Bake in the oven for 20 minutes until the pepper is cooked and the cheese is bubbling and brown.
Serve with a green salad and some rice.
Variations
For a vegetarian version substitute cooked savoury rice and lightly fried finely chopped courgettes and aubergines for the meat. (V)
