We hope the Easter Bunny has been good to you… Beautycouture.ie HQ certainly cannot wait to tuck into some chocolate. And if you don’t fancy eating just ester eggs, here’s Magenta de la Cruz’s fab chocolate Easter muffins recipe! De-lic-ious!

Easter is here and with it comes chocolate again! For many who have given up sweet things for lent, Easter Sunday can be a day of excess! I love theses Easter muffins because unlike a cake you can sort of ration the amount young kids (or even adults) end up eating. They are velvety, rich, moist and super chocolaty so don’t OD on them. Also great for using in your Easter Egg hunts too instead of plain old chocolate eggs.
Muffins
250g Unsalted butter
250g Self raising flour
300g Golden caster sugar
3 Heaped tbs cocoa
Pinch of baking powder
200ml Cola drink
75 ml Milk
2 Eggs
1 Tsp vanilla extract
Icing
250g Milk chocolate
159 ml Double Cream
Knob of unsalted Butter
Chocolate mini eggs to decorate
Preheat the oven to 180°C fan / 170°C / 350°F / Gas mark 4
Sift the flour, sugar, cocoa and baking powder into a large bowl.
Melt the butter and cola drink together in a saucepan over a gentle heat.
Mix the eggs, milk and vanilla extract together in a separate bowl.
Combine all the liquids together and then mix with the dry ingredients
The batter will be runny when it is mixed. Line a baking tray with large muffin cases and pour the mixture into each one.
Bake in the oven for 20-25 mins. Remove and allow to cool
For the Icing
Chop the chocolate into small pieces
Heat the cream in the microwave until bubbling and pour on the chocolate with the knob of butter and stir in a bowl until the chocolate has melted.
Allow to cool and then place in a fridge until its ready to use.
Decorate each muffin with icing and some chocolate mini eggs if desired!
