Uber Yummy! - Magenta’s Love Cupcakes

A fresh cupcake is nothing short of heaven… add some uber luscious buttercream icing and well gals, lets just say it won’t matter if you have a guy or not this Valentine’s Day as these sweet treats are dishy enough!
Cupcakes –
8oz unsalted butter
8oz caster sugar
8oz self raising flour
4 free range eggs
1 tsp vanilla extract
Icing –
3oz unsalted butter
10oz icing sugar
1tsp boiled cooled water
Preheat oven to 160°C fan / 180°
Cream the butter and sugar together until its light and fluffy (use a hand mixer)
Add in the eggs one at a time beating well after each addition.
Sieve the flour and gently fold into the mixture
Add in the vanilla extract and mix in.
Spread among some paper cases. It should make 12/18 depending on the size you want them to be.
Put in the hot oven and bake for 20 mins appx.
Once they are ready leave to cool on a wire rack
While they’re cooling make the icing.
Mix the butter and icing sugar together until its really soft and creamy. Use the tsp of water now if needed.
Put into a piping bag and pip onto the cupcakes or use a spatula to layer it on.
Decorate as you wish.
For a variation, add a couple of drops of natural food colouring to the icing mix for different colours or 1tbs of cocoa to the icing sugar for chocolate icing.
Then gobble and enjoy with a huge mug of tea
